Gluten-free black beans and rice

Ingredients:

1 package Mudd Creek Bourbon Street Butter Spice/Rub

1 cup long grain white rice

1 ½ cups water

1 15-ounce can black beans, drained and rinsed

1 tablespoon dried minced onions

1 teaspoon minced garlic

Directions:

  1. Combine rice, water, onions, garlic and 1 tablespoon Mudd Creek Bourbon Street Butter Spice/Rub in a medium saucepan with a tight-fitting lid.
  2. Bring to a boil.
  3. Stir once, cover and reduce heat to low.
  4. Simmer for 18 minutes.
  5. Add black beans and an additional tablespoon Mudd Creek Bourbon Street Butter Spice/Rub to rice.
  6. Stir and serve!

Suggestions:

  • Add some onions and green peppers to make excellent burritos.
  • Add some andouille sausage along with a 15-ounce can of diced tomatoes in their own juices to the bean/rice mixture for a more flavorful meal.
