Very Low-Carb Cheesecake

Carbohydrates aren’t only the major cause of weight gain, they can also cause blood sugar problems leading to diabetes. Fats on the other hand do not cause weight gain, as half of the calories in fat are needed to digest it. So the calories in fat and carbohydrates are pretty close to equal.

Carbohydrates can be addicting. Resistant starch fiber can help keep us feeling full and help overcome a carbohydrate addiction. To help with weight loss and blood sugar control, I have modified this cheesecake recipe. It is very low in carbs and contains resistant starch fiber.

When you feel a carb attack coming on have a piece of this cheesecake. You do not need to feel guilty having this sweet treat.


  • ½ cup pecans or walnuts
  • 2 tablespoons butter

Grind nuts and butter in food processor. Pat nuts and butter into the bottom of an 8-by-8-inch pan.


  • 3 eggs
  • 1 teaspoon vanilla
  • ¼ cup Hi-Maize 260 Resistant Starch Fiber
  • ⅔ cup Splenda
  • Two 8-ounce packages of full-fat cream cheese

Place filling ingredients in food processor. Blend until smooth and then pour over nut crust

Bake at 350 until set and slightly golden.


  • ¼ cup Splenda
  • ¾ cup frozen berries of choice
  • Cornstarch (small amount, as needed)
  • Water (small amount, as needed)

Place Splenda and berries in saucepan. Heat on low until juice forms, then thicken with a little cornstarch and water. Cook until desired thickness.

Spread berry topping over cheesecake.

Refrigerate and enjoy without guilt — even if you are diabetic. No need to count calories or carbs with this recipe!
