Berry Good Muffins


Nonstick cooking spray

½ stick softened butter

¼ c. natural sugar

¼ c. natural brown sugar

½ c. 100% egg whites

¾ c. Chobani 0% nonfat Greek yogurt

1 t. vanilla

1½ c. whole wheat pastry flour

1 T. baking powder

½ t. salt

1 c. blueberries


  1. Preheat oven to 400 degrees.
  2. Spray muffin pan with nonstick cooking spray.
  3. Cream butter with sugars.
  4. Stir in egg whites, Greek yogurt and vanilla.
  5. Combine flour, baking powder and salt in a separate bowl.
  6. Add flour mixture to creamed mixture and stir to combine.
  7. Fold in blueberries.
  8. Pour batter evenly into 12 muffin cups.
  9. Bake for 15 minutes, or until golden.
