Cucumber and red onion stuffed tomatoes


4 Roma tomatoes

1 c. English cucumber, diced

½ c. red onion, diced

Salt and pepper

½ T. fresh thyme

1 c. non-fat Greek yogurt

1 T. dry ranch seasoning

1 t. lemon zest

¼ c. dried cranberries, chopped


  1. Slice 4 Roma tomatoes in half lengthwise.
  2. Using spoon, scoop out seeds and stem area.
  3. Salt and pepper inside of tomatoes.
  4. Combine cucumber, onion, salt, pepper, thyme, Greek yogurt and ranch seasoning.
  5. Add lemon zest and chopped cranberries.
  6. Divide mixture among tomatoes.
