Mini Feta Burgers with Greek Yogurt


1 lb. ground round

4 oz. nonfat feta

1 clove garlic

2 T. shallot

¼ t. cumin

¼ t. cayenne

1 c. nonfat Greek yogurt

2 T. green onion (no white)

2 t. chives

1 t. fresh lemon juice (and zest)

Salt and cracked pepper

Fresh spinach


1. Mince garlic, shallot, green onion and chives individually and set each aside.

2. Combine ground round, feta, garlic, shallot, cumin and cayenne in large bowl.

3. Form meat mixture into 1-1/2" mini burger patties, season with salt and pepper to taste and brown in skillet over medium heat.

4. Remove burgers from heat when desired wellness is achieved and place on a serving platter.

5. Whisk together yogurt, onion, chives, lemon juice and salt and pepper in bowl.

6. Top burgers with piece of rolled spinach.

7. Place a dollop of yogurt mixture to top of spinach and secure with toothpick.

8. Sprinkle with salt and cracked black pepper, chives and lemon zest.
