Portobello Open-Faced Sandwiches

This is a perfect recipe for the month of love! Whether you avoid meat, your significant other is a vegetarian, or you have a husband like mine who needs meat at every meal, mushrooms are a meaty vegetable that are sure to satisfy everyone at the table!

Ingredients:

  • 8 ounces mushrooms, any variety. (large Portobello, mini Portobello, crimini, button, etc)
  • 2 tablespoons olive oil
  • 3 teaspoons oregano
  • 2 tablespoons balsamic vinegar

Instructions:

  1. Preheat oven to 350 degrees.
  2. Wash and slice mushrooms into thick pieces.
  3. Combine oil, oregano and balsamic vinegar in a small bowl.
  4. Place mushrooms in a baking dish with an edge.
  5. Pour oil mixture over mushrooms and bake 30 minutes.
  6. Prepare meal with mixed greens, feta cheese and an open-faced hard bread like ciabatta.
