Simple Peanut Pork Tenderloin with Cabbage Rice


1 lb. pork tenderloin, thinly sliced

2 medium onions, thinly sliced

2 T. olive oil

1/2 c. natural peanut butter

2 tsp. low sodium soy sauce

1/2 tsp. ground coriander

1 T. garlic, minced

1 tsp. dried red pepper

1 cabbage, shredded

1 15-oz. can tomato sauce


Simple Peanut Pork Tenderloin:

Preheat oven to 350 degrees. Arrange pork (can substitute chicken or turkey) in oven proof baking dish. In a skillet, fry onion and garlic. Then add remaining ingredients, blending well. Pour sauce over pork and cover. Bake 30 minutes and then remove cover and bake additional 15 to 20 minutes or until done. Serve over cauliflower or cabbage rice.

Cabbage Rice:

Boil 2 cups of water. Toss shredded cabbage with olive oil and desired spices. Place cabbage in a vegetable steamer. Steam for 8 to 10 minutes or until desired texture. (Use tongs to sift through cabbage and ensure even doneness.) Use in place of rice in stir-fries or chicken dishes needing rice.
