Slow Cooker Tomatillo Chicken


8 tomatillos, husked, rinsed and sliced 1/4 inch thick

1/4 c. pickled jalapeno pepper, sliced

1 med. onion, thinly sliced

4 medium sweet potatoes, sliced 1/4 inch thick

2 T. jalapeno juice

1 T. garlic, minced

1/3 c. fresh cilantro, chopped

4 chicken breasts, bone in


In a slow cooker, layer onion, then potato slices, chicken breasts, cilantro, garlic and tomatillos. Sprinkle with salt, pepper, jalapeno slices and jalapeno juice. Cover and slow cook on high for 6 hours. Remove chicken and place liquid from slow cooker in a pan. Boil down to reduce consistency of a sauce. Pour sauce over each chicken breast.
