Chipotle Mashed Potatoes

Potatoes have gotten a bad rap. People are often under the impression that they are a vegetable. Potatoes do grow among the vegetables, but they are a starch. For that reason, and because typical accompaniments include butter, sour cream and cheese, people often avoid potatoes when eating healthy.

No need to cut potatoes out of your diet completely! Try this simple and YUMMY recipe for a healthy spin on the typical potato!

Ingredients:

2 ½ lb. Yukon Gold potatoes cubed

½ medium onion chopped

½ c. chopped mushrooms

1 c. chicken broth

1 T. diced green chilies

1 T. chopped Chipotle pepper in Adobo sauce (including seeds for extra heat)

½ T. Adobo sauce

½ c. non-fat Greek yogurt

1 t. fresh thyme

1 T. chopped parsley

Directions:

1. Cook cubed potatoes in salted water until tender.

2. Spray nonstick pan with nonstick cooking spray. Sautee onions, mushrooms and ½ c. chicken broth until onions are tender.

3. Drain potatoes and place in mixing bowl.

4. Add green chilies, chipotle pepper and adobo sauce to potatoes.

5. Remove onions and mushrooms from stove.

6. Pour entire mixture into potatoes.

7. Add yogurt, parsley and thyme.

8. Mix until desired consistency, adding additional chicken broth if necessary.

9. Salt and pepper to taste.
