Chicken Pumpkin Stew


1 T. cornstarch
1 T. garlic clove, minced
1 T. olive oil
1 T. smoked paprika
1/4 c. natural peanut butter
3 c. sugar pumpkin or butternut squash
1 14.5-oz. can diced tomatoes
1 onion, chopped
1 red bell pepper, chopped
1 1/2 lbs. chicken breasts
8 oz. fresh green beans
14 1/2 oz. low sodium chicken broth


Heat oil in a large saucepan over medium-high heat. Add chicken (cut into cubes), sauté until brown and move to a plate.

Reduce heat to medium and add onions, red pepper, and garlic. Sauté 4 minutes until softened. Add 1 1/2 cups broth, tomatoes and paprika.

Bring to a boil, then add chicken, pumpkin (or squash) and beans. Reduce heat, cover, and simmer 12 minutes or until chicken and pumpkin is tender.
